Hey kcotiger. What do you hear about Huy Fong Foods building a Sriracha plant in San Antonio? The neighbors of the current plant complain that when they process the peppers it makes their eyes water and nose and throat burn. Even though they only do that 2 weeks during the year. I figure in San Antonio the neighbors would complain during the 50 weeks they aren't processing the peppers.

What's funny is that everyone across America loves those onions, but where they come from is probably the worst area of the entire state. Its flat as ****, hot as ****, bug infested to the point they will carry your **** off when you sit outside, nothing around for miles but cotton, peanut, soy bean, peach and pecan fields, and when you do come to a town its just black people in projects shooting each other over rims and stereos. 
Anything farther than 50-80 miles south of ATL is a total ****hole. Other than the coastal area, its pretty nice. Savannah, Jekyll Island, etc.

I don't really use Vidalia onions for anything. Too sweet to really use for cooking to me. The regular yellow onions are my choice most of the time. They sweeten up just enough when cooked.

Walla Walla sweets are the best but they only last about 4 weeks. So I have to substitute with Vidalia or Mayan.
Or mayo, or tomatoes, or salad dressing.
