Me too. That comes from that ladle of oil they pour on top as they're cooking. Sometimes they put the bacon weight on top too.

I think I've only been there once and it wasn't for breakfast. I just don't have any near me. I think the closest one is about 30 miles from me

I think the trick is to press most of the moisture out of them before you cook them to make them good and crispy.

Probably why leftover bakers are better than freshly boiled or raw.

I'm in spud country and an old farmer that owned a restaurant too told me years ago it also depends in part if they are new potatoes vs storage potatoes. New potatoes are hard to brown. He said 'they have to go through a sweat' (his words ) - meaning in storage the starches have time to convert to sugars. Or maybe it was sugars into starches. Can't remember.
