Grilled boneless pork chops on the Foreman, boiled red jacket potato chunks with butter & chives, and cottage cheese with itty bitty tomatoes.

It needs to be Johnny cake and it needs honey as well as butter. Then it's really good.

Hey Lee, smoked my first brisket. Tender as can be, taste great. Made it a bit spicier than I intended just from using to much of the rub on it. I did do a creole butter type injection and let it set over night.

Sounds like your practice is coming in perfectly timed. You've got six weeks!

Looks good for a first timer. The cooking process (I would imagine) is fairly similar to a pork butt from what you've told me, so I'm sure that took some of the anxiety out of whether you'd embarrass yourself with it. I wouldn't feed my first few to anyone because I was afraid they weren't any good! How long/what temp? How heavy was it? I'm curious to know what kind of rub you used.

It was small. Maybe 5lbs? Yea I threw the wrapper away without looking. It did cook a lot like a Boston butt. 1-1.5 hr per lb at 225. This one cooked for 6, I pulled it at 185, wrapped in foil twice then a towel and then put in ice chest for two hours to let settle.

The rub was just a standard BBQ pit rub, I uses to much as it's got some spice tho. My electric smoker that I use wood in also has a water pan so I put a few cups in it to help keep meat moist and it does a great job.

There's places if you know where to look. This was a small local chain. First time going there but I'll definitely go back. Just wish there were closer.
