Actually, the fear in pork was trichinosis. However, CDC has reported for many years that it has been virtually eliminated in domestically raised pigs for human food supply. Sadly, some still haven't got the news, or gotten over what is now officially "wive's tales".

Pigs, feral hogs, cougars and black bears can all harbor Trichinella infection. Successful trichinae control programs by the U.S. pork industry have nearly eliminated the disease in domestic swine raised in confinement, but hogs raised outdoors in close contact with rodents and other wildlife have an increased chance of acquiring Trichinella infection.

He'll dis tuna from the wide open saltwater ocean, hamburger from beef raised on the farm outdoors, but as his first choice eat turkey sandwiches raised in hot, humid, disgusting Arkansas poultry barns.

Don't get me wrong - I love me some turkey too. But I'm not naive enough to suggest that is any safer than any other protein.

I only eat 10-12# of burger a year: burgs, taco meat, meat sauce for Italian dishes. I prefer whole cuts.

Why no tuna? Mercury? Or don't like seafood.

Sadly albacore is the tastiest but has the most mercury. Or is that a bad rumor?

I'll tell you what, a tuna melt made with albacore on sourdough with provolone melted is a top notch sammich!
