Personally, I think simple is best. Nice char grill flavor with a bit of rosemary. Its nice to mix up pork and beef occasionally IMO. And lamb's a must of course during Passover/Last Supper season or a communion meal.
I'm still surprised Costco imports those 2" chops from NZ and sells them for $6.99/# whereas these local sheepherders fetch around $14/#.

There's no Costco around here. I've found that Sam's Club has fantastic beef here though. I would have never thought of buying beef from SAMs but the flavor and quality are top notch.

Just had the same thing happen to me. Went to a cookout a week or two ago and they had some ribeyes that were fantastic, asked where they came from and he said she got them at Sam's. I was blown away, they were probably the best store bought steaks I've ever had, so much so that I gave her some money and told her to pick up some more for the next weekend. And the second ones were just as good as the first.

Yep. A vendor brought us a whole ribeye a couple years ago at work. We cut them up and grilled them and they were fantastic. Froze half the steaks for later and even after frozen, they were still great. I've been sold on SAMs beef ever since. My normal is usually Winn Dixie but I find their quality has gone down the last few years.

Yep, Sam's has good stuff too. Costco is like a high end Sam's, at least around here. We buy bulk, vac pack, then thaw/marinade/grill and it's awesome. Pork and fish too, good stuff.

Those pitmasters down in Owensboro Kentucky know how to make that sheep meat taste REAL good. I favor the Moonlight BBQ Inn, myself. Fine buffet.

What a disgusting thing to do to a perfectly good piece of lamb. Buy a boneless leg of lamb from Costco. Stab it with a knife in several places and push in whole cloves of garlic. Thread some fresh rosemary sprigs through the netting that holds the boneless leg together. Pour a little red wine over it and roast it. Outstanding! And with the leftover meat you can make a great lamb curry.
