leftover spaghetti and meatballs are boring so I sauteed asparagus, mushrooms, peppers and garlic to put on top of the noodles before the sauce. DELICIOUS!

Pasta al'amatriciana
Italian pancetta is sauteed in olive oil then diced red onion is cooked in the oil and pancetta drippings along with a little crushed red pepper. Chopped tomatoes are added, as well as a little grated Parmesan cheese. My new attachment for my pasta machine arrived today so I used it. It cuts 10mm wide ribbons of pasta. The wider pasta gives the dish more body. Since 10mm is close to 4/10", I call it my 40 caliber pasta maker.

My lovely wife found some affordable fresh caught wild halibut fillets. They'll be sauteed and topped with a hazelnut cream sauce and served with roasted little potatoes with garlic, olive oil and rosemary, and steamed green beans topped with raspberry jam. If it were just a little bit warmer we would have dinner on the patio.

seared Ahi Tuna, wild rice with a citrus/red pepper/almond sauce
Tuna just off the boat day or 2 ago. The joy of living on the coast.
