It's over 800 pages. It's a beast of a book. Feels like about 10 pounds. We have a lot of cookbooks but just about everything is in this one.

This guy has so much going on the last few years it's ridiculous. His new restaurant opened last summer along with all his other businesses. We went once so far and it was incredible. He's a really nice guy but is always moving 100 miles an hour. I know his nephew pretty good.

I had gluten free spaghetti tonight at home

Other than having to cook the pasta an extremely long time (11 minutes) I couldn't tell the difference. I think because gluten gives bread elasticity as I understand it, that's not important in pasta.

Also it didn't try to clump together like regular pasta does after it's cooked

I'm definitely eating it again

Mind you neither were fresh pasta so I'm not claiming it's better than that, but perhaps fresh gluten free pasta would be just as good

It was HEB brand which is just the grocery store name here. Not sure who might make it for them though.
