Thighs are probably my favorite piece of yardbird. Juicy flavorful dark meat, but more meat on the bone than legs and wings. Breast just don't have much flavor and get dried out too easily. Leg quarters are the best (leg and thigh together).

They're way to fatty and greasy for me. I'd rather have a leg.

I like the breast meat, as long as it's not been dried out. Dad made some the other day that were incredible. Perfectly flavored and moist.

Breast is best cut up and seasoned; I've tried to fix it in such a way as to keep it from drying out and it's virtually impossible. OTOH, it makes great chicken fajita meat.

Shrimp stew with potatoes. It's now Lent so the wife is forbidding meat tonight. Personally I think it's just a plot down here for the seafood fisherman.

Hey Al, I'm getting ready to try making that étouffée recipe you gave me awhile back. Sometime soon it'll happen.

I have no idea, but as long as it's ready when I get home from work, and I have a cold bottle of Mountain White.....I'll be happy. It's been one of those days at work today

Dang that sounds good too. Just finished making a stock with all the heads and shrimp parts. Smells great in here already.
