My windshield always has Rain-X applied... liberally. It seems to defeat just about anything outside of rocks and giant rubber buggers flung up by C5 Z06s that won't let me by because they are 'faster'.

I wasn't being rude, but thanks, spell out exactly what fluids you think you will encounter on a course and maybe someone else here can tell you exactly how you can get it off your windshield without washer fluid.

I've got the stock hood, but I'll chime in anyway.
A car in front may spray up oil or coolant from a hose leak--happened to me at BIR last summer. Sprayed a light coat of oil all over my car, but not enough to limit my vision. I left the wipers off because that would have smeared it all over. No amount of washer fluid would have helped.
And I generally clean my windshield several times a day with a spray bottle cleaner and towel.
Chances are, you'll rarely use wipers on a track. Again, BIR last summer--light rain and steadily getting worse--at intermittent wiper setting #2, I figured out I don't need to be out there anymore.
My suggestion--put the hood on, don't worry about the washers. Drive it until you figure out you'd like them, then install the wiper arm version.

I got rid of my sprayers and bottle, haven't missed them. Been this way for about 8 months now.

Same, if I get something on my windshield it will just stay there till I can get it off at the gas station or home. If something gross were to get onto the windshield that obstructed my view chances are using the wipers will only make it worse.
