Forgot my camera, but I was sorry I did Al. Went to a little local hole in the wall tonight that a chef from New Orleans opened up here. Had the special on the chalk board, fresh caught cajun grilled red snapper in a butter based seasoned sauce and cajun red potatoes, with collard greens.

I'm generally not a big fish eater, but this was without a doubt one of the best meals I've ever had in a restaurant, or anywhere for that matter. My God that fish was the best I've ever eaten, and that sauce he prepared for it was out of this freakin' world.

It was so damned good, and I figured I'd be hungry later so I ordered a 20 oz. medium rare, cajun blackened prime rib with two orders of collard greens and French bread that they import fresh from NOLA every day to make Po' boys on, got that to go.

And in case you were wondering, though you probably weren't, that plate is about double the size of a traditional to-go plate, so yes, that is a huge prime rib.

Damm that all sounds great. I'm not big on prime rib. I don't get the attraction unless it's done that way. Cooked to perfection then sliced, seasoned, and seared on both sides. Place down here called Houston's does it just like that and they are famous for it. A thick chunk of red snapper can't be beat either. Nothing worse than ordering snapper and it's a thin filet from a small fish. Just bad form. What's the name of this place?

I had a whole buttload of brush to burn this afternoon, soooo... when the fire had died down pretty well I skewered a couple of portobello and Swiss bratwursts and roasted them over the embers. Then I sat down near the fire and enjoyed them with some BBQ chips and a cold brew. Sure wish Charlie could've been there; a cheerful fire, food, and a couple beers makes you want to tell a few jokes, lies, and funny stories on a Fall evening.

Yeah that sounds great. I did similar tonight, but after I finished my dinner. Invited a friend over with his dog, we sat around the fire with brews and burned some old boxes. Cardboard goes up in a hurry!
