Divinity is good. But difficult to make. The humidity and air temp outside make a huge difference in results. It's crazy.

My mother would wait days and days for the perfect conditions to make it. And was always *****ing about the candy thermometers being wrong when it didn't turn out.

I hadn't either some years back. Up in Seattle at a party and this 60 yr old gal brings a cooler full from her front yard on Puget Sound. She would cook them on the barbie just until the shells would barely open. Tequila was flowing so I thought wth. Dang they were great! Little splash of tobasco.
Then that led to trying them raw on ice. NW specialty.

Jake's Grill in Portland ftw!!! They bring them in from various inlets and sounds from OR up to AK. And they each have a different flavor.You can pick from like 12 or more varieties or try the sampler plate. Only safe in months with an 'R' in them. No not like chicken. Little bit of ocean salt water left in them.

Fried are a waste. At least warm them on the grill till the shells open if you're not into them raw.
