The topping/crust is the most important thing, it is a knock out for everyone that eats it. The potatoes have to be fluffy, but the crust on top has to be hard and crisp. It has to snap when you break though it down to the bottom into the sweet potatoes.

The crust on top it thick, its more like a caramelized/candied type thing. When its right, the pecan crust is hard, almost crunchy, but then you break trough it the sweet potatoes underneath are creamy, fluffy, and smooth, the topping is super sweet and rich, like some kind of nut based confection.
That reminds me. I think I asked you once before for your aunt's red velvet cake recipe that you said is so good. I've never made one and would like to try sometime soon. I've had a hankering for a Jewish Apple Cake so I may make one of those tomorrow
