The station I usually go to has 87, 89, and 92. I think there's some around with 93, but not very many. I don't want to get stuck on the side of the road cause I couldn't find it anywhere. 
I was thinking 87 for the street tune, 89 for performance, and 93 for race, which I doubt I'll be using much anyways.

Now you can obviously put higher octane in, but you can't put lower octane in.
So if you think you can readily find 91 at a pump then go with that like Scothew says.
Now once you put 91 in and get the race tune the other 3 tunes are going to be junk. I had 3 tunes when I got my X-cal 2 for Seven, but once I loaded the 93 Race tune all the others might as well not even exist. They were a waste of time.
So my advice is plan on always using 91 octane and get two tunes for that, if you feel like hugging a tree then get a third economy tune or something for gas mileage.

It's for a DD though...so maybe I'll do 87, 91, and 93 then. So hard to decide.

I'd do all 93 if I could. 
When school comes though, I'll be driving every day using a little more than a tank a week. 87, 91, 93 probably works best for what I'm using it for.
