Gotta big pot of white beans simmering with a pile of bacon fat and Tasso in it. Gonna smother down some fresh pork sausage with it and corn bread of course. Dang I'm hungry now.

i felt like italian tonite so i made pepper and garlic crusted striploin with roasted veggies on polenta.

I love white beans (I assume you're talking about Great Northerns). But a ham hock is the only thing I ever use in my beans. Its just fatty enough, just smoke cured enough, and the bone in the middle gives off some good flavors from the marrow.

I hardly ever make just whites though, I usually mix them half and half with pintos. Been using the crock pot for them a lot, can just dump it all in there and put it on all day and then cook the other stuff and corn bread at night when you get ready for supper.

Yup Great Northerns. Don't mess with ham hocks much in mine. I do like some good smoked neckbones in mine though. That's some good stuff. Usually a lot of smoked meats for my beans.

Try a pot half and half with pintos. Its a great mix of flavors. You have to cook them longer if you put them all in at the same time because the pintos take longer to cook. You could put the pintos on about an hour ahead and the then add the whites.

I never cook pintos. In fact I don't know anyone down here that does. Always red, white, or Lima beans. Gonna have to try pintos. Always up for something different.

Try the pintos mixed with whites like I mentioned above. They're great.

I cook frozen limas often but down here we add a roux to them with smoked meats or shrimp. More like a stew. It's pretty fantastic. I like the baby limas for this. I will definitely try some pintos soon though.
