Boeuf Bourguignon. The pancetta and beef have been browned, the carrots and onions and garlic have been sauteed, the pancetta and beef have been put back in the pot along with red wine, beef broth, tomato paste, and thyme. In another hour and a half I'll add the sliced mushrooms and some butter and flour thickener and a few minutes after that it will be DINNER.
