First thing I would do in this situation is post all of this on Yelp! and any other similar local website for ranking businesses. If I was considering letting a shop do work on my car, and read something like this on their page, I would not think twice about it and run, not walk, from their "work."

I just noticed this on their website....
So why did they charge you $50 to "go over the car with customer". And where is this detailed list with your signature that you approved? I would make screen shots of this on their website and print it out (right now in case they change something on it). Introduce it in court and ask them to produce the detailed list of the work to be done with your approval.

You are correct.
The largest tax increase in Ohio history went into effect today, raising the sales tax and adding taxes to such things as automobile repairs and installation of cable television.

It must be a tax on labor and not a tax on services? I doubt lawyers would vote for a law that added sales tax to their services?
