Steeda sport springs WITHOUT ISOs or Vogtland springs WITH ISOs? Both cost about the same and have roughly the same drop (ISOs vs. No ISOs).

Steeda. The Vogtland will give you a better ride at the expensive of handling. Steeda's will be stiffer but handle alot better.

I'm just worried the Steeda's won't be low enough. I don't want it super low cause it's a DD, but I'm sick of it looking like a 4x4 even with the Bullitt springs.

And how do you match shocks/struts to springs?

You don't "match" to springs....you choose shocks/struts for your application and intended use.
