For those of you wishing you had done CC plates, is that because you do a lot of road racing/autocross or something? I expect to only hit the track a couple of times a year and I can't handle suspension noise.

I definitely don't want what bornagain stang is having.

The ride quality at freeway speeds is great, feels very buttoned down. No floating. However, at low speeds, the cc plates have an incredible amount of noise over bumps. IMO you want to be able to adjust camber, yeah you can use camber bolts but they are smaller and have a lower torque spec than the stock bolts. Don't cheap out, get CC plates and do it correctly so everything is exactly how you want it.

Even for a car driven mostly on the street? Is there much of a difference in NVH between the two setups?

I have no added noise from the GC plates I have, the Vorshlag plates and MM plates I have read add no extra noise, I haven't heard the same about J&M or Steeda, so you have a few choices.

Camber can be brought back into spec with the GT500 mounts by installing them with the arrows pointed in towards the engine compartment. That's what I did. Simple, cheap, and effective.

I have been debating some of the same questions. I took a leap and ordered the Steeda sport springs, HD strut mounts, and adj pan hard bar with the orange Koni's, since I didn't think I would really benefit from adjustable shocks on the street. The shock savings more than covered the cost of the adjustable strut mounts. Now I am waiting for the Fed Ex truck and trying to figure out when I will have the time to install it all.

Back into spec but not the same, one may be 1 degree and the other 1.3 or even 1.5 which may still be within spec.

I did the alignment on my car!
Camber was 1.1 on left side, 1.3 on right side
Caster 7.2 left side, 7.4 right side
This is with GT500 strut mounts, koni yellows, and steeda sport springs!
(Arrows pointing towards engine)

These are specs for a 2014 mustang GT
Camber spec is 0 - +1.5
Caster spec is +6.4 to +7.9
Mine stock was
camber +.7 left side +1.0 right side
I can't remember what my caster was stock!

After lowering my car drives straight as an arrow and handles Great!
Also remember when I sit in the car the extra weight changes camber slightly on the left side so it is probably almost even with just a driver!

Thanks. Sounds like a good way to go.

I'm not trying to be cheap but I don't want to spend money on the adjustable plates if I'm never really going to use the adjustments they have. I can see myself adjusting the shocks because of how simple it sounds, but I won't be trying to dial in my camber. I'll get an alignment done about once a year and that's it. The only other thing that concerns me is any added NVH. Although it sounds like that isn't an issue with the right setup.

With the camber and caster adjustment you will usually set it and forget it, same with the shocks once you have them exactly to your liking.
