True curb weight of most 2005-2009 GT's (full fluids, no driver) is around 2500 lbs, plus or minus up to a hundred pounds or so depending on how heavily optioned the car is, and what year it is (2007-09 are a little heavier). My minimally optioned 2008 GT weighed 3491 lbs with a full tank of gas when stock. With an empty tank and no spare tire, it would be around 3350 lbs or so.
