I'm not sure why Ford didn't include the coolant temp in the Track Apps, but I will be getting an OBD Bluetooth reader soon.
In the meantime, my dash temp gauge usually reads just below the middle of hot and cold. Does anyone know what that temp. is? (approx)

Unless you're sitting and idling in Death Valley in the middle of summer for an hour, or you're running it on a track at WOT in 100 degree temps for 20 laps, I don't think you have to worry about the temp unless it blows a hose and dumps all of the coolant out.
Can't answer the OP's actual question, but I've seen an aluminum adaptor that is attached inline with the upper radiator hose that has a threaded hole that fits a sensor for most temp guages. Then you'd have a true temp guage. Buy the guage holder that fits in the AC vent made by Roush (vent is still functional).

Take all the guess work out by adding this to your radiator hose: (has the ground screw for sensor too). Now just add a gauge pod or gauge holder in the left AC vent from Roush, and no more guess work on what the temp is.
