In other news, I got a big pot of shrimp, crab, and okra gumbo done and I'm waiting on the rice to finish. Got damm I can't wait! Y'all can't imagine the smell in this house.

My wife makes gumbo and wastes great shrimp and crab because she won't put filé in it and it's totally missing the Cajun flavor. Drives me nuts.

File and bay leaves are a must. That roux makes a big difference too. The bad thing if file is probably not easy to find out there. The store bought stuff isn't close to the stuff we got down here. Home grown and ground.
