the secret is that you don't need much kale to call it a kale salad! LOL! this one had lettuce, shredded cabbage, peppers and raisins in it too. Kale was only 10% i'd say but calling it Kale salad seemed cool haha

I've been using raw spinach instead of lettuce a lot lately. In a salad, even like it on a burger.

I've almost never been a fan of lettuce on a burger. Tomato I'll do, grilled onions, bacon, and just recently I've started eating pickles again, after an almost 20 year hiatus lol. I like to have a salad on the side with my burger, and of course fries or tater tots too. But yeah, I generally like to have the salad not inside the burger

I'm trying to be a good boy and get my weight, blood sugar, and cholesterol under control. Even started going back to the gym 4X a week, one day with a trainer. I'd like to lose at least 30lbs, hopefully more....but 30 would be good for now. It's difficult at (almost) age 64 with arthritic knees and a bottomless pit for a stomach.

Tonite I'm making baked chicken cutlets coated in crushed honey mustard onion pretzels instead of bread crumbs. My veggie will be a medley of asparagus, onion, and roasted peppers sauteed in fresh garlic and oil. A side of wheat pasta, also in garlic and oil, will be my carb portion. Desert is fresh strawberries, pineapple, grapes, and blueberries.

I'd rather have a sausage and mushroom pizza.

That's exactly why I put onion, garlic, mushrooms, and peppers on my pizza.

Try doing a light wilt on spinach. I do that for my veggies - I prefer that over full raw. I throw a little chicken brother, then wilt with tomatoes and mushrooms. Voila.

wild pacific bc salmon for my Canada Day dinner tonight.
rubbed with brown sugar/smoked parika/thyme and lemon zest on top. then butter/garlic drizzled on before serving.
