Yea I did that on my GT500 for a while. Turns out it cools better with one in because the fluid flows through the radiator too fast and doesn't have a chance to cool. You'd need at least a washer or something to restrict the flow some. So an open t-stat does the same thing and helps warm up the car for better fuel economy. I did notice a big improvement in MPG with the 160 t-stat in versus no t-stat at all and better cooling on the track.
