Track day Coyote oil temperatures

I have a new to me 2011 Mustang 5.0 GT Premium Brembo package 6 speed with 3.73 gears. I plan on using it as a track day car. My first track day experience was scary. Living in Florida and having 50+ plus years of racing experience I replaced 5W20 with 0W40 Castrol synthetic oil before I went to the track. I have my shift light set at 6500 rpm yet after a few laps I was seeing 302 degree oil temps. Note. I had installed real oil temp and pressure gauges at the oil filter with an adapter and a water temp gauge at the radiator hot coolant inlet so the oil temp I was seeing wasn't computer generated like the dash gauge. I've heard Coyotes run hot but this is rediculous. I've never had any engine run this hot. I just installed a Mishimoto oil cooler and plan on installing a dual core radiator but I have not had a chance to go to the track yet. How do you guys who track day your Coyote engines keep the oil temperature down near the 250 degree range??

I think the answers is most people don’t, as a lot of cars don’t even have oil temp displays in the lower trims.

I tracked my ‘14 GT PP for 5 years without once checking the oil temp. I did 3-4 track days per year and a total of 8k miles per year. I used Castrol Edge 5W-50 and the oil analysis always came back good.

ive seen over 300 in some Boss cars as well. Good oil cooler like Setrab will help. But if you can get to around 280 I wouldn’t worry about it.
