So if one were to change their mind and pull the stripes down the road, what are the odds that the paint would be undamaged?

same as any other graphics kit, may have paint fade, but that would talk a long time.

I think Flat black will suit.
The reason is that , the you car color is white , and on the white the black will look so cool.

well I would go with gloss. but matte would be nice also. gloss is easier to maintain and waxing may gloss up the matte. (maybe someone with Matte stripes can confirm or deny this) There are also coating that you can use to dull the stripe. mine has gloss stripes even thought they are different than yours. It may help you to decide. Good luck
