You don't want to go any wider, especially on a front heavy car like the Mustang.

275/40's are taller. it will help mph and that shift issue. it will be slightly slower than the 255/40's. but the yokahama's last longer.

Not at all. A 245 or 255 will be fine on an 8" wide wheel.

My stock Lightning rims are 18x9.5 and they came factory stock with 295 F1's and I ran 305's out back for years...

Just so you know, a 285 is the MAXIMUM recommended size on a GT500 9.5" wheel. Any wider and you outside of specs. 255 is about all you wanna put on a 9". Get the wheels widened if you like them.
Agreed, going beyond this doesn't do much other than look nice and contribute to an increased chance for failure.

IMO the 285's on the Shelby wheel don't do much in terms of handling, it almost seems they were slapped on late in the development cycle after the rims had been production green lighted (purely conjecture on my part).

The rim/tire package on the GT500 is certainly an odd beast (at least the 18" tires and I guess the 19's as well)., it should have been 255/40R19 on a 19 x 9.5 and 285/35R19 on a 19 x 11.
