New Rear lower fascia
I saw that video, too. Ugh. Too bad they didn't notch the upper backs of each position in the rear seat so the head restraints could slide down into them when not in use to give it a cleaner look. Perhaps it would not be allowed under new laws?
'11 rear end is even a touch fussier than the bumpy, lumpy '10. Both are just too overstyled with too much going on. Looks like the black diaper doesn't even really fit properly, bulging out the rest of the bumper, creating even more lines, angles and lumps.
Perhaps in '12 Ford will clean up the styling a bit as the '11 still looks like a bit of a discordant group effort, not a cohesive, singular stylistic theme. This is especially important given, what with the new 5.0, this will be the most viewed angle of the Stang :-)

The headrests fold forward, same as on my 2007 Sport Trac. The reason they fold is obvious so that they don't block any of your rearward vision. If there is someone sitting there it doesn't make any difference as their head will block your vision anyway. I'm sure the feds would not allow the headrests to fold back as that would allow someone to sit there without the use of the headrest. It's not a big deal. If it bothers you that much buy a 2010. You could probably also swap it with a seatback from a 2010.

Probably a 2005-2010 for that matter. And talk about an easy swap!
