You can turn it off using a SCT Xcal. Once you turn it off though, the dash button is useless. You have to turn it back on using the tuner.

There is also a way to set the default to off. There is a black box you can buy which plugs into the wiring harness and does what you want. I dunno who makes it though.
FWIW, I turned mine off with my Xcal for a while, but when you do that, not only is the dash button useless as stated above, it makes the "skidding car" light on the dashboard stay lit up all the time. It annoyed me so I just set it back to normal operation.

In Car and Driver's test of the Shelby they said there was an integrated launch control in the traction control.
they just held the RPM's to 3500, dumped the clutch and floored it. The system got them to 60 in 4.6 sec.
when they turned the system off they were slightly better at 4.5 sec.
If the GT has the same system why would you want it off.

The other downside to turning it off with the tuner is the sliding car light on the dash stays on at all times or if you have the IUP it says "check traction control" at all times. Mine is off on my race tune (one less thing to remember in the staging lanes) and on my street tune I have just gotten into the habit of turning it off. My wife drives the car daily and I want it on for her. Bad for the S/C'd engine or not.
