So maybe I just don't understand but how is it that people who ordered their GT coupes last year still don't have their cars but people who ordered their convertibles last month are already taking delivery?

I can imagine that's pretty frustrating, but my understanding is that there are a certain number of planned 'verts in a Job - no matter what.
So, for example, let's say that a job is 4000 cars. If 25% of that job is allotted to convertibles then you are going to get 1000 convertibles and 3000 coupes. So, if there are 10,000 orders for coupes and 1,000 orders for convertibles you will end up with a lot of coupe people waiting and lot of happy convertible orders - unfortunately.
Don't forget that Ford won't dedicate a whole Job to custom orders - they need to get cars to the dealerships too. That will also cut into that equation.

It seems quite defeatist to put restrictions on the number of cars that a dealership can have. You'd think that Ford would pump out as many cars as there were orders for. Is this a matter of keeping supply just shy of demand to keep interest in the car up? I know around here, my GT is one of a small handful driving around and it gets looks/comments everywhere I go.

No, not really defeatist.
Everything is done by allocation (do a search and you can read a ton of threads on it). Good or bad, dealers that have performed well in the past are rewarded, and dealers that don't perform as well (smaller dealers, as well as underachievers), are not.
Remember - the Mustang isn't the only Ford vehicle out there. Unfortunately for Ford, other than the Escape Hybrid, it's really the only one commanding attention.
The dealers have to keep moving the "unwanted" vehicles if they want to receive a hefty allocation of "wanted" vehicles.
Unfortunately for those waiting on coupes, having the verts available now will likely slow the process down even more, since the verts will continue to be produced, eating away at the number of GT coupes produced each month. Last I heard, GT coupes were down to 13%.
Not fair to the customers in the end, but no one said life was fair.

I'm completely with you. Ford claims that customer satisfaction is thier main concern. It's evident that money is their main concern. Like said before, if they were so concerned about their customers they'd build them as their order came in and ship them out IN ORDER!!
I'm just as frustrated seeing people who ordered after me (see sig) getting their cars. However, I've also noticed it's not only the verts that are coming in first but people who ordereded coups as well. Where you live in the US shouldn't matter when it comes to orders. Order in, order out. It's that simple.

Life is too short to settle for something you may not want.
I waited 8 months for my truck in '95, this is nothing.
