weird smell

I just recently added new rotors,springs and pads to my 04 GT. I have noticed a weird smell coming from the front end of my car after I drive it. Could it possibly be the new pads/rotors breaking in ?

Sure could be. How many miles do you have on them? Did you use anything like disc brake quiet on the pads between the table and the piston?

rotors/ pads probably only have 100 miles on them and I did not put any lube or spray on them

Depending on how you drive, the first few times they get "hot" you might get a little smell from any oil burning off, this should go away.
