The local Ford dealer offers these services a recommended preventive maintenance. Has anyone had it done to their cars? If so, at how many miles and how frequent. Thanks.

While i've never done an engine flush, I have had the place I go flush my tranny out. Basically they take fluid and hook up a pump setup to the tranny fill and drain and pump fluid through it constantly. Then I have them fill it with Amsoil tranny fluid (i supply myself).
Not sure if its worth it, but I do it about every 60k miles.
I'm about due for a coolant flush though.

DO the tranny flush every 30k(assuming you have an automatic). Not so sure about the engine flush, though. Most of them seem like snake oil to me. If you're really worried about the engine getting dirty, change the oil, drive it long enough to come up to temp, and then change the oil again.
