is there a way to install a manual trunk popping mechanism in a 65 coupe?

Yes, many aftermarket choices. Also you can get the reproduction cable setup with a lever. And I have read of people using Lincoln units from the pick and pulls.

i just sold a repro remote latch unit. scott drake reproduces them, they are about 45 bucks through most mustang vendors
