I put a little more miles on mine, but not that much. Since October 2019 I have put less than 3000 miles on mine.
I still have made it a point to never go more than 12 months without changing the oil. I prefer to start each season with fresh lube in my pan, but also do not want the poor thing sitting in last seasons fun (waste) until spring. Oxidation, Condensation, and Combustion by products will make the oil lean to the acidic side. As the car sits the dirty oil is causing damage to engine parts. It is akin to having a kid sitting in a dirty diaper for the 3 to 4 months the car sleeps.
So I always get the oil changed in the fall just before (a week or so) putting it away for the winter. It sits in a climate controlled garage all winter, not outside in the weather so, condensation is not a huge concern (its only 3-4 Months). I used to do it in the fall and then again after 300-500 miles in the spring, after I knock any corrosion and/or rust off the moving parts. With the little amount of miles that I have put on mine lately I still make it a point to change it at least once a year. Time breaks oil down like everything else (Belts, hoses, tires, and other non-car items too). I would not want to ruin my very expensive motor because I skipped a $100-$150 maintenance item. It is really cheap insurance to keep the cars engine at it best. Kind of the Pay me now or Pay me later Fram Filter commercial...

My thoughts on that, and the way I maintain both my '13 GT and my wife's '08 GT500: at the end of the season they get put away with some fuel stabilizer in the tank, and that's it.
Don't start them unless they'll be driven 20+ minutes, to fully warm up and burn off moisture in the drivetrain and exhaust.

Hey there Gabe! Like yourself, I also always just put some Sta-Bill 360 in the tank when putting the Mustang away for the winter at the end of each season... I also never start up the Mustang while in storage starting from Nov-Dec until spring between April-May and then do an oil/filter change after running the engine for about 20 min to circulate and burn off any remaining condensation and rust that may have accumulated while sitting in the crankcase over the winter... My question however is when you still lived in NH, was your garage climate controlled/heated? As I honestly don't remember... Knowing that my garage is neither climate controlled nor heated, would you still recommend waiting until spring before changing the oil, providing of course that the engine does NOT get started at all while the Mustang is in storage during the winter... In the meantime, thanks for taking time to address my concerns/questions...

But it would get down to 40-45 degrees in there at times.
If we had a forecast of very low temps for an extended period of time, we had a small plug-in electric heater that we would run, because we had water pipes going through there.

My wife's Shelby and my Mustang both average way less than 3k miles/year, I still change the oil in both every spring.

Alright I Got my 07 Gt-500 in Late 07. Shortly After That The Economy Tanked and I Lost My Company Truck. So I Commuted The 1.5 Hour Trip Both Ways For a Couple of Years! That's Where the Majority of My Mileage Came From. It's Slows Down Pretty Abrupt after 2010.
I Checked My Old Warranty / Recall Service Record and Got Some Mileage Readings.

I think as long as you change it sometime every 12 months you will be fine. The write up was my justification to me, because I no longer thought it was worth changing twice in maybe 50 miles...

I've been changing mine just every 12 months since only putting well under 3k miles per year... Actually, I only put 200 total miles between last year and this year, so I really don't think it's necessary to change the oil every 6 months knowing that I don't put more than 3k miles per year anyhow lol.

I hope to drive mine soon. I haven't driven it in a bit.
I do fire it up every weekend and let idle on the driveway for 15 - 20 minutes and drive it up and down the driveway to get the parts and liquids moving.
I actually do this all year round, unless there's a lot of snow on the driveway, but it stays mostly clean/dry.
