Explain coilovers

I would eventually like to upgrade the suspension of my 13 GT, and I've been doing my research. The one thing I haven't been able to understand is coilovers. What makes them different from springs, struts, and shocks, are they any better, can they be used for both street and track, how do they affect the ride, and are they worth the expense?
I'm just looking for an education since I haven't turned wrenches in a long time.

Coilovers allow for ride height and spring preload adjustability.
