Angry Track key experience - some TC and SC still on

I have two experiences now with the red key where I got a little sideways (ok, a fair bit) at the track yesterday and the stability control kicked in and cut the power. It was only for about a half second, but it was obvious the car was taking over. I have also had a few experiences coming into power off a series of turns where it feels like the traction control is making the car hesitate for a little - again, leaning hard when applying the power.
I know that the program is running because the Idle is working and the throttle response and engine braking are better than the black key.
My solution was to push the TC button once, which changed the display to "Traction Control Off" and the TC light came on the dash. This eliminated that TC induced hesitation. When I held the brake and gave the button two quick taps, it says "AdvanceTrac on" so it is definitely toggling on, rather than off.
Is it possible they left a little Stability Control and Traction Control on purpose just to save your a$$ when you push it to the edge? I know it is still a street car, but I would like to know there is a full "off" mode.
Thoughts?

If you hold the TC button down for about 5-6 seconds it'll turn all babysitting off.

The dash will read both "TC Off" and "Advancetrac Off."

Thanks for that - I don't know why any of it is on with the red key. I will give it a try.
