Good source for take-off covers? ebay. I bought some (unused GT500 take-offs) for less than $400 a while back. I have not yet installed them.
How to's: I have swapped seat covers in other cars. Its not difficult, they usually clip on, zip on, and use hog rings in the centers and sometimes the parimeter of the base (but I think the Mustang clips around the base). You basically remove the factory covers and install the new ones in reverse order (start in the center - there will be some hog rings or attachemnt points in the center or areas where there is a pleat or bolster - that is how they get the shape and tight fit.)
Hog Ring pliers w rings are less than $20 on ebay
Alternate sources for seat covers? Try Katzkins (or is it Katzskins) - they are a huge mfg of seat covers for hundreds of makes/models, and will do custom colors and materials. Prices for standard stuff is not usually outrageous, and the quality is better than OEM. I have installed one set of their covers on a Camry, and they installed exactly as the OEM covers, and after 100k miles, still looked brand new.

Ebay take offs, you can score the whole 2 seat covers for around 600-1000 bucks depending on the seller and time. Lots of GT500 covers, they have nice color stripes, but the snake kind of kills it if you dont want to look like a poser, but if someone dosnt care, then the ones from a GT500 are cool.
Just browsed through and there are 2 Ebay listings from ShelbyAuctions, thats for the normal GT leather Recaro covers, so go and try to score one! Auctions ending in 3 days.

The GT covers are a good idea - I had not come across those.

The seatcovers that I bought are all black - no stripes. leather and suede. They do, however, have the snake. That really didn't bother me, I don't think it reaches the "poser" level, but to each his (or her) own...
The GT covers are a good idea - I had not come across those.
