I believe that is how Bullitt is spelled when referring to the car or the movie. That is how it is spelled on the back and on the steering wheel of the car.

The police officer (Steve McQueen) who drove the green 68 mustang in the movie Bullitt, his name was Frank Bullitt. That's where" Bullitt " came from. So the name Bullitt came from Hollywood not Ford.
