The stuff I've read list that this color will be avaliable sometime later in the model year.
(Don't know exactly when.)
This is from the timeline section, of this site, about the GT/CS
Exterior color choices are limited to Redfire Metallic, Performance White, Vista Blue Metallic and Black. Valencia Yellow is to be added later in the model run.

Hi all, just joined the forum not too long ago. Purchased my 2007 GT/CS last Thursday. I went with the intention of buying the Shelby, and actually liked this one much better. WHile the GT500 has some great perks under the hood, I test drove the CS and liked how it handled much better. I will drive this baby till she drops, or I drop...whichever comes first.

I just received my new GT500 / GT/CS rear bumper cover today by FedEx, and now I have a big decision to make. Keep in mind that my Mustang GT is black and I will be installing a 3dCarbon GT500 ducktail spoiler (already ordered). Do I paint the new bumper as a GT/CS and keep my side rocker panels painted, or do I have the new bumper painted as a GT500 and replace my rockers with V6 unpainted rockers? I'm leaning towards painting it GT/CS style, as the whole car is black and there wouldn't be much contrast anyway. What do you guys think? Thanks, Steve
