I am being offered a diminished value claim for $500?

Is this fair or should I pursue for more?

I'd go for $1500 if it's not showing up on CarFax or AutoCheck. If it is, $3000.

Problem is who knows how long it might take one of those to display an accident, could take months. That said, I don't think your situation will result in a CarFax report.

^ if it ends in the report ... it hurts the resale value big time.. my wife's '13 A4 she had an accident somebody ran a red light and hit her on the fender... no big damage was done structurally, just cosmetic damage.. but it showed up on carfax and i took it to dealer to see what buy in value is current it was 7 grand diff than KBB value... so we ended up putting claim to the insurance company n got that squared..

I came back asking for more, and he responded saying $800 was the most they could do, as it was fixed with OEM parts and will only be reported on the carfax as cosmetic damage. I will have to sign a form releasing them from any future claims, etc.

The nearest Carmax is 300 some odd miles away.

Unfortunately, in my experience that I think I linked you to earlier in this thread, I learned that there are no laws in regard to diminished value. It's been upheld in court cases in over 40 states but that doesn't equal laws. I think your best bet would be to ask them for an independent appraiser to take a look at the car - that was State Farm's policy (responsible party in my accident's insurance company) and they paid me exactly what he said.
