I've run 17's,18's and 20's on one 06 GT that I had.Once the car was lowered the ride went away.I don't know what your looking for in the bigger wheels but if its looks stick with 18's.If want handling run the 19's.What ever you do get some quality tires built in some of new side wall technology.(T/A KDW,Goodyear F-1)
Right now I'm running T/A KDWS 235/50/ZR18" tires on 18X8.5's(Konigs) and the ride is good,so is the handling. If at all possible try and get a wheel that is hub-centric if you run 19's.That way you don't have to run that little spacer that fits between the hub and rim. Here are a few pic pics with the different wheel combos I ran,all on the same car.

I went with 19s because I thought 18s were too small and 20s were too big. I have 19x8.5 foose speedsters up front and 19x9.5 speedster in the back with the BFgoodrich T/A KDW2 and I have no complaints.

The ride was rough but the car would cut corners with the 20's.I'm taking a different approach with new 07' GT and doing a full suspension change out including Tokicos adjustable dampners, front and rear sway bars pan hard bar,LCA's,UCA and lowering coils. The KDW2's that 05blkGT is running are awesome tires and grab really good.I'm just curious...which year Mustang are you driving? The 07'Gt's have tire pressure sensors fastened by a big band on the inside of the rim.The bands are not reusable.

I'll prolly get another set of Raceline 20's in the spring well after I drop the car.
