I took the GT to the junk yard scales and it showed 3800 lbs with 3/4 tank gas and my *** in it. what should I be aiming at a for weight and what goes first to reduce the lbs.

that weight sounds about right. theres no real weight to aim for, its all a matter if your going to be a hardcore dragster who only brings the car to the drag strip and never on the streets. If thats what your going to do then by all mean rip out the whole trunk, strip it down to bare metal. get rid of the heavy seats and put a nice set of bucket seats. if you want take sound deadening out from beneath the carpet. remove the rear seats, they have rear seat delete kits. get a one peice driveshaft, you will lose 20 something pounds and gain some horses from it. get light weight brake components, being its rotational mass and your eliminating some mass that will also help and count for very few horses like 2 or 3. rip off the door panels and other interior parts that you have no use for. basically anything you can remove from the car that doesnt affect it in any way possible then by all means, yank it out if thats what you want to do.
what im trying to say is, you have to find out what the car is going to be used for. if your getting hardcore with it, rip everything out you can without affecting driveability. if your like most people who just want to add power and drive the car and have fun with, there is really no set weight goal you should be at.

If you plan to go back and weigh the car after some weight reduction for comparison purposes, your best bet is to have the car weighed with a full tank of gas, the spare inside, and not other junk in your trunk or passenger compartment. This also allows you to compare the weight of your car to the published curb weights that are out there, which are done with full fluids and no driver.
