converter lockup for mountain driving?

converter lockup for mountain driving?
In a month or so I'm having a manual valve body 4r70w put in my car, one thing that hasn't been decided yet is about locking the converter. I don't know much about converters, so I'm looking for some advice.
I won't be launching hard or drag racing, I mostly drive in the mountains. Would having a manual lockup switch for the converter be a good idea? I'm assuming that locking the converter up while in the mountains would be the way to go and most enjoyable, am I correct? To get the best engine braking down hill, and better throttle responce when going through the turns and accellerating.
I've been advised to stick with a 3000 stall converter since I have a blower (stock converters being at around 2400-2500 or so?)
Anyone have any ideas how I should setup the converter lockup? Should I leave it automatic so that it only kicks in with 4th gear? automatically in 2,3 and 4? Manual so I can choose, or what are my other options?

Torque converter lockup is set by MPH. I think the default is 40 MPH.
I have never heard of anyone that is not a drag racer wanting a full manual valve body.

in the mountains I want to hold the gear, I don't want the car to up-shift when I'm going down hill or everytime I let off the gas to go around a turn. It gets anoying I'm no good with a clutch.

Level 10 has a paddle shifter and full manual valve body for the 5R55S stock tranny. I guess you went with the 4r70w route though and that should be just fine.
