Shelby CS69s would look awesome on your GT500: 20x10 in the rear

There are very few (and pricey) 265/35-20s -- 255 or 275 are much cheaper. The 275/35-20s should fit all the way around, just a bit taller, 27.5" or so (1/4" each sidewall). Also they are max width for a 9" wheel (wish I'd done them for my 20x9, but they were about $60 more per tire -- next time, maybe).
Roush's 18" is a 10" wide wheel all the way around with 275/40-18, which is just a bit shorter than the stock 27".
The ideal width/height is the 255/45-18 or 255/35-20, or 285/40-18 and 285/30-20, but those last two are more rare, more expensive (though overall height sometimes varies with brand). The 275/40-18 or 275/35-20 are generally cheaper.
Or just change the tire size with your PCM flasher!
By the way, my 20x9 wheels are 27lbs each (stock 18" is 25lbs) and the tire is 26lbs (vs 30lbs for the 18" BFG), so no real increase in mass, just MOI.
