You will have to flash the computer to recalibrate the speedometer. Best way to do this is to get an SCT Xcal2 or a Diablosport Predator and do it yourself. These tools are unvaluable for tuning in the future as well.
If you only want to change the speedo calibration the dealer can do it but it won't cost you much more to get one of the aformentioned tools to do it yourself.
In regards to getting the gears changed I did mine with the help of a friend so I can't speak to that however I am sure others will be able to offer advice in regard to pricing.
All I will say in regards to pricing is this.
Use a REPUTABLE shop who has had experience with setting up gears. There a lots of ways to screw this up and it absolutely MUST be done correctly!
Don't go with the cheapest price as it will, almost garanteed cost you more down the road.
Be carefull who you choose. Today's typical auto repair shop that is accustomed to working on FWD cars doesn't know jack about setting up gears in a RWD car or truck.

Just to give you a gauge on what it may cost.
I paid $623 (including the cost of the gears) to have them installed by a reputable shop. Seeing you already have the gears, I'd look for an installed price of somewhere between $300 - $400. Don't skimp here on the price, it is labor intensive and needs to be done right or you'll be doing it all over again.

Mine ran 6 something including the gears. Looks like you'll have to do some driving, don't know too many Mustang shops in and around Barstow. ST Motorsports in San Bernadino is somewhat close, but still a drive.
I got mine installed from Swanson Performance in Torrance, but that's way too far for you.
On shops, I've read stories here where guys have taken their Mustangs to a 'recommended', 'experienced', or 'reputable' shop all who've claimed to have done numerous S197 Mustangs, only to have their gears groan and whine. Bottom line, get an agreement with the shop owner that guarentees that the gears will be quiet. And if they aren't, he agrees beforehand that the shop will do what it takes to get them installed correctly even if it means taking it back several times. If they can't offer you this assurance, walk and look elsewhere.

Man I'm glad my install wasn't near that much. I paid $200 for the install (the installer was featured in 5.0 last summer) and they've been stone quiet since day one. I asked the installer if there were any break-in procedures before nailing it. He said to take it easy for a mile or so to let the lube circulate. 1 mile later I nailed it and have been smiling ever since
