351C. I have done a crapload of work on these engines and the heads are vastly superior to any heads that you can get for a small block. Canted valves. Bigger, MUCH mugger valves and ports. Better combustion chamber shape ect. The weak point is the stock valve train. The springs, push rods and rocker arms are junk. The best solution I found was that Crane makes a valve train stabilizer kit for these motors. I converts the crappy pedistal mount rockers to adjustable, stud mount rockers. You also get guide plates with teflon inserts. The Crane kit recommends using the 351 Cobrajet rockers. Don't These are also junk. We broke lots of them! I discovered that big block Chevy rockers arms fit and work much better than the Ford ones. Same ratio, same stud size, better design. Do this and you'll never have a problem wioth your 351C. The 351C also has a longer connecting rod which reduces side loading which results in less friction and even wear on the bores. It also has a larger diameter camshaft which means in a street engine the ramp on the lobe isn't as steep. This means you can get a cam with high lift and keep the duration fairly short for good driveabilty and still have good top end power.
Yup, 351C great motor. I would choose it over a Windsor.
