Armor All and your GT/CS
For cleaning your leather, Lexol spray-on leather cleaner is awesome. My wife rides horses all day long and the tan leather interior of our F-450 really picks up and shows off the dust from her clothes. After applying Lexol and rubbing down with a clean terry cloth all of the leather surfaces look like new. 
I wouldn't recommend the Armor all leather cleaner wipes. They leave a sticky film that actually attract more dirt. Trust me I know from experience!
As or the plastic dash pieces, I just use those pop-up disposable glass wipes. They actually clean the plastic dash better than the glass. I also keep a microfiber cloth in the center console to do general dusting every couple of days.

Another vote for 303 Protectant. Excellent product with UV protection. I use it on the vinyl surfaces of my car and my boat.
Another product I really like is the Zaino Leather Cleaner and Conditioner. The cleaner is a thinner consistency spray-on and the conditioner is a thicker lotion that you apply with a towel or wax pad. It even smells like leather.

Armor All and your GT/CS
The last time I used 'Harm-it-All" was on our 1969 Shelby GT 500 Vert, back in 1973. I finally figured out that 'IT" was starting to cause my Dash to crack!

In all reality, the best leather cleaner is a mild soap (like saddle soap) followed by a quality conditioner. It is also not good to clean leather all the time...twice a year if needed. I'm also a firm beleiver in not using any chemicals on the dash, etc. unless you have to remove a stain.
