Nah it's location bro. Preparation can be as simple as it gets with seafood that good and fresh. Best I had was in Grand Cayman. So impressive.

Ain't nothing wrong with seafood from the Gulf, you don't even have to add oil to fry it, its already got it in there.

Yep. In the Caribbean the fish is clean and kinda sweet. Great stuff. Can't wait to go back to the Caymans.

It was better than that!
As I was reaching for nutmeg I forgot I had China 5 spice. So I rolled back on the nutmeg and used the china 5 in the glaze - lightly - it can be overpowering but a hint really matched the peach and other spices & herbs. Also topped the roast with a bit of cumin and rosemary gr before adding the onions & garlic.
The whole dinner took several hours and lots of wine, but definitely worth it. Best flavors for pork loin I've used yet.
