Yes, there is a lot more to do....you can tour the Shelby facility, nearby is Hoover Dam, Ethel M's chocolate factory has tours and samples, Imperial Palace has a car museum....
Of course people watching is free and always entertaining.
If you walk through the shops at Bally's there always seems to be someone from a TV network trying to get audience members for trial shows...they offered us $10 cash each to sit in on one but we had other things to do.
The shops at Ceasars palace has a Neptune type centerpiece at one end with an aquarium...at night every so often there is a free show there. Sadly I discovered on this recent trip that the Exotic car store in that same area(near Cheescake Factory) had closed.

No but you get to sign the wall there. I heard something about getting a lunch nowadays...it was 2 years ago when I visited and we didn't get lunch. Of Course that was before they started outfitting the Shelby GT's. We did get to see some prototype S197's back then though so you never know, you might get to see something being tested for the future but they won't tell you anything about it, you'll just have to look and hazard a guess as to what they are doing.
They only allowed tours at certain times back then, not sure if that has changed so plan ahead and call them.
