Need some guidance here from some vets

I personally would try this also because leaving the ignition on will leave the steering wheel free instead of momentarily locking it, and also keep both hands on the wheel ( don't know that I would say NEVER do it the other way though ), but be careful, if the engine does not start back up immediately, you will slow down very quickly.

Tell her to get the stick. She can obviously shift and it will at least give her a little exercise doing it. You don't use it you lose it!
The automatic takes the fun out of and belies the reason for getting the Mustang. What's the point of getting it if she can't have fun driving it? Not computing your own shift points in a Mustang GT and letting some machine do it for you is a lot like riding a Harley with training wheels. You think you're cool and probably don't even notice that everyone else is laughing.
Of course this is my opinion, and though I claim it proudly I won't be at all put out if anyone disagrees with me.

No offense, but did you even read the post?
Chances are if she got a stickshift, she wouldnt even last a year before her knee/feet blew out on her.
The A/T is just fine, i've come to grips with it. She can drive a stick, but, in her current shape, she can't drive one. if you get me.

UPDATE - NEW DEVELOPMENTS
The aunt has found a 1965 coupe in town that she really likes. a 289 2v with Disc brakes, C4, Flowmasters, and Headers. We're thinking that if she were to have the second pony laying around with an A/T that maybe, just maybe the 07 will be a 5spd. Do yall think that could work?

if it uses opposing fans to acuate the trans, its a slushbox. if it usues planetary gears and clutchpacks. its a slushbox. i dont care how hard it shifts, doesnt matter.
however in this guys case the auto is the true way to go. no reason to be in pain to drive manual.

umm, somehow I am begining to question the validity of this entire thread....
A. I wonder how the motor "clutch stalled" at speed on the freeway going from 4th to 5th. Entering the freeway at speed in 4th gear and dumping the clutch is going to .. umm not really do anything except either spin the clutch plate a few revolutions and then engage or simply pop out of gear but certainly not kill the motor as the final drive plus 5th gear is way to low to cause the motor to stall.
B. The aged and semi decrepit (due to arthritis) older women has a sudden find of a 1965 Stang, which apparently being owned by a street racer....or some Mustang owner that wants to dump their 65.....?????
Nice story but my BS meter is ringing on this one.

maybe your 'BS meter' is breaking? And, although she isnt in the greatest shape, she is not decrepit. And the 65 is being sold through a highly respected local shop that specializes in Mustangs, and older fords.
Take your negative comments somewhere else.
