I have been lucky enough to find a torch red manual, and traded it up even with my auto, however, it doesnt have the ICAP, it just has the black leather interior and IUP.

Can I order the ICAP seperately and have the dealership put it in?

It looks like a $200 option, Id be happy to pay that + labor for them to take my seats out and put in the Red Leather and inserts.

I couldn't find a GT with ICAP and asked the dealership this exact question. In fact, the way I poised it is if they could put the ICAP in for 200 bucks, I'd buy the car. They said no, it can't be done as a dealer-installed option. They said they could point me to a leather shop that could do a custom job that would look similar for 1500.00 (!!!) Unfortunately the 200.00 option is only if it's done at the factory, they can't swap it out for that.

Think about it, the dealer would have to order new front and rear seat covers, head rest covers, as well as door panels and mats.
They would then have to pay the labor to have all the work done by an upholstery shop.
To give you an idea; five years ago, a leather drivers seat bottom cover from Ford was about $400 for my '92!
I would guess $3000+ for original Ford installed

^ If price is not a concern, you don't need a dealership to do it -- any upholstery shop could do the seats. Then just get the floor mats from the dealer (if you want them).

Every dealer would do it - they'll just charge you a fortune.
